About milk
What is milk?
Milk is a biological liquid of a complex composition made of water, proteins, fats, carbohydrates, mineral mater, vitamins etc. The definition of milk, in the strictest sense of the word, implies the unaltered secretion of the mammary gland, obtained with the constant and complete milking of healthy, normally nourished, and regularly milked cows, at least 15 days before and 8 days after calving; nothing is to be taken or added to that milk.
Which vitamins are present in milk?
Vitamins play a big role in our bodies, among other things, they affect our metabolism, oxygen transfer and antioxidants. They help the body use carbohydrates, proteins and fats. Milk is a very good source of water soluble thiamin (vitamin B1), riboflavin (vitamin B2), and cobalamin (vitamin B12) while niacin (vitamin B3), pantothenic acid (vitamin B5), pyridoxine (vitamin B6), vitamin C and folic acid are present in smaller quantities, therefore milk is not considered to be the main source of these vitamins in a diet. Milk contains significant quantities of vitamins A, D and small quantities of vitamin E and K which are soluble in fats.

Does the milk have to be cooked before use?
Moja Kravica sterilized milk is UHT, while Moja Kravica pasteurized milk has a shorter expiration date. Neither need to be cooked before use.
What is pasteurization?
Pasteurization is a technological operation of milk processing as well as a sanitation measure for destroying all pathogenic microorganisms which are harmful to human health. It consists of heating the milk to temperatures lower than 100 ºC at certain intervals.
What is homogenization?
Homogenization is the process of breaking down and evening out the milk fat globules to get more stability for the milk-fat emulsion in the water. After homogenization, the size of the milk fat globules shrinks to 1-2 µm. Homogenized milk has a fuller taste, a more intense white color, and the separation of the milk fat to the surface is prevented. Most of the time, two-level homogenization is used.
What is sterilization, what does the abbreviation UHT stand for?
Sterilization is a technological operation in which the milk is subjected to temperatures over 100 ºC. UHT stands for ultra-high-temperature. It is usually done at temperatures ranging from 135 to 142 ºC, during several seconds. During this short sterilization time, all microorganisms and their spores are destroyed.
